Good News and Bad News

Mmmmm, chili.



We had a chili dinner last night and I was given the task of taking some of the leftovers home to stick in the freezer.

Soooo... the good news is that I didn't have any trouble freezing the chili last night.

The bad news is that I didn't have to because on the way home I almost missed a stop sign, hit the brake a little harder than I should have and dumped the crockpot (which was sitting on the floor up front). 

Good news... Almost all of the chili ended up on the floor mat.  Em and I had yummy chili smells to enjoy the rest of the way home and it made cleanup a LOT easier.

Bad news... When I got Emily out of the car and started cleaning up, she proceed to enthusiastically march around in our driveway singing, "Oh crap... oh crap... oh crap... oh crap..." 

Good news...  I'm very thankful my regular vocabulary doesn't include too many words worse than "crap".

Gee, thanks...


We just wrapped up our VBS at our church this weekend and my husband was trying to explain to Emily why I wasn't able to spend much one-on-one time with her while I was working on the planning stuff. She's had a blast and couldn't wait to go back each day. He told her to be sure to tell Mommy thanks for VBS. She turned right around and said, "Mommy, thanks for all this BS."

VBS part 1

In July, Emily attended her first Vacation Bible School through my parents' church.  She had a blast and couldn't wait to go back again.

I'm thinking she needs to forgo the make-up for another 100 years.

Help us help them!

Our church, The Shepherd's Fellowship, is going to be giving away 100 backpacks full of school supplies to local children who are in financial need on July 24th. This is a great way to show the love of Christ in a practical way and we invite you to help out!

The following is a list of supplies that we need....
  • Erasers
  • Yellow, #2 pencils
  • Black and blue pens
  • Glue or glue sticks
  • Packs of 24 crayons
  • Round-tipped scissors
  • Boxes of tissues
  • Two-pocket folders
  • Notebooks

Not included in the above list is book bags. We are able to purchase a bulk amount of book bags through a website for about $4.50/book bag.

A few updates all wrapped into one!

I just realized I've been posting to Twitter and Facebook the past week or so and haven't added any fun Emily stories here. It's time to fix that!

Sunday, Feb. 7 - I'm impressed that Emily (remembered) and just told me the story of Daniel in the Lion's Den that she learned about 2 weeks ago at church.

Monday, Feb. 8 - Tonight at supper, Em started telling me about the part in Mary Poppins where the kids "aren't tired" but M.P. sings a lullaby and they fall asleep. I started humming the song and Emily's eyes got big and she asked if I was Mary Poppins. I put on my "teasing" face and nodded. She IMMEDIATELY started sobbing big sobs w/ BIG tears and said she didn't want me to be Mary Poppins and that she wanted me to be Mommy and she wanted her D-A-A-A-D-D-Y. (Who knew Mary Poppins could be so traumatizing?)

...and NO, I didn't show her THIS version!


Tuesday, Feb. 9 - And finally, today's Emilyism: We were supposed to have had an appointment this evening to get our taxes done. However, due to the snow, we rescheduled for next week. When I informed Emily on the way home that we weren't going to do our taxes tonight, she started crying (similar to last night's Mary Poppins debacle) and in between heavy sobs finally managed to say, "But I WANNA get my taxes done!" Seriously?!?

A Day at Home with Sickie

Emily came home last night with a drippy nose and a slight cough. Normally, I wouldn't be too concerned because we had just spent Sunday evening outdoors at a cookout and it IS starting to be cold season. However, we've had the flu running rampant in our county and surrounding counties and most doctors are calling it H1N1 since it's supposedly too early for your typical seasonal flu. A few people I know have been diagnosed with H1N1 so I felt it was probably wise to err on the side of safety. Em was supposed to go to speech therapy this morning, then to the sitters (who was going to take her along to a MOPS meeting this morning where there would be a bunch of other kids) and then I was going to pick her up in the afternoon and take her to physical therapy. (How's that for a run-on sentence?) I decided it might be a smart call to stay home until we know what's really going on.

So, what did we do today?

We did what every good mom would do with her sick kid... We read books, drank homemade hot chocolate, made homemade playdough, knitted a few hats and wrote letters on recycled homemade paper to all of our friends and family. Seriously? Are you buying any of that because I just might have some swamp land in Florida to sell ya!

We (Emily) got to have a Disney movie marathon complete with Snow White, Mary Poppins and a dash of Beauty and the Beast. We also threw in a few PBS kids shows for a sprinkling of educational value. I did make a pretty yummy lunch for her and made sure she drank lots of fluids. In conjunction with the fluids, we also kept working on potty training throughout the day. (Would love to hear any great ideas for potty training! It's been dragging on for over 6 mos. now and almost seems to be getting worse instead of better....)

While Emily was watching the boobtube, I did a little tech work, tech support and tech professional development. While I was taking a few tech calls, Em decided to mock me and even spent a good deal of time repeating EVERYTHING I was saying.

During the course of the day, I also did some laundry, some dishes and some cooking. I enjoy reading blogs that feature recipes. The people that write these blogs tend to call themselves "foodies". Sounds a little cheesy to me. Today, I'm going to be a food blogger. Today, I'm a flogger!

Or not....

Our church was supposed to take treats to a local nursing home this Sunday but have decided to postpone it until everyone is feeling better. I wanted to try making some new recipes for rice krispy treats (using a crock pot!) and popcorn balls. The results are in!

I love using Fruity Pebbles in Rice Krispy Treat recipes. So... fruity! And... chewy! And... just plain yummy. I read online recently where a lady slowly melted the marshmallows and butter in a crockpot while she was making supper and then mixed everything together for some great treats. What a brilliant idea! No constant stirring the stuff on the stove. Simply melt, stir and mix it all together. -- Or so she said. It took quite a while for my stuff to get its melt on. It finally did and I was very hopeful that my yummy, fruity, sticky mess would turn out scrumptious. It glopped out of the crock just like I thought it should have. And, it spread onto my cookie sheet like I thought it should have.



After about 15 minutes it had cooled down to room temp and I found a knife to cut my yummy, fruity treat. Unfortunately, it required a little more pressure than I remembered. As a matter of fact, it took a LOT of pressure to cut through it. And, when it did cut through, it pretty much shattered into a bunch of shrapnel. Seriously. It hit me in the face! I deemed this particular attempt worthy of roofing shingles and unfit for senior citizens. I'm blaming it on stale marshmallows and not on crock pot user error. I decided it wasn't worth messing with and it quickly found its way to the trash can.

UPDATE 10/24/09 - I took a 2nd whack at making Rice Krispy Treats today and they turned out great! Nice and soft and chewy and the recipe came straight from the Kellogg's website. Yummers!

I've been itching to try a Caramel Apple Bar mix and finally got my chance this afternoon. We picked a mix up while we were on vacation in Tennessee that simply required adding an egg, apples, and some melted butter. I know my husband loves apple stuff and I've been anxious to make this. I added a few (optional) chocolate chips. The verdict isn't in on this one yet. I sure looks yummy but we're still stuffed from supper and haven't cut into it yet.

UPDATE 10/24/09 - We tried this one after Em went to bed last night. It was okay. I was really surprised that with all the apples, caramel nuggets and chocolate chips that I put in that it was actually rather bland. I melted some butterscotch chips this afternoon and drizzled them over the top. Maybe that will make them a little bit sweeter. Or, warm them up and load 'em up with vanilla ice cream and caramel ice cream topping!

I hear the folks at the nursing home surprisingly really like popcorn balls. I wasn't quite ready to spend a lot of time on popcorn balls so I decided to try a recipe called Honey Krunch Popcorn. It's basically caramel corn but made with a combination of honey and brown sugar. I read through the recipe and it sounded like it would work pretty easily. The only thing I was wondering was whether it was going to end up being a crunchy or a soft and chewy snack.

I started with 6 cups of popped popcorn.



In a saucepan, I melted 1/4 cup of honey with
1/4 cup of brown sugar and brought it to a boil.


I drizzled it over my popcorn, mixed it all together
and then poured it out on a cookie sheet lined with
parchment paper. I then baked it for 15 minutes
in a 300° oven, stirred it and baked it for 15 more minutes.

The results:

...another fine product for the trash can to sample!

The popcorn didn't really burn, but ended up having that almost burnt popcorn taste.
It was actually just starting to smolder when it was time to take it out of the oven!
The flavor wasn't that bad, but it wasn't that great either.


I'm thinking this just isn't a good week to try new recipes. Earlier this week, I made baked chicken breasts that turned out pretty good and planned on making scalloped corn to accompany them but I was missing some eggs. I found another corn recipe that involved corn (obviously -- or maybe not with the way my luck has been going!), cream cheese, butter and milk. I plated the food (Isn't that what they call it on the Food Network?) ...and served it up. My sweet, lovable husband knows I always want his honest opinion on the stuff I make because I want to know whether I should ever bother making again. Part way through the meal he says, "The chicken is good, but I don't understand the corn." I had to laugh... I didn't understand it either. Food improv just isn't my thing this week.

Enough confessions. Now you all know that contrary to popular belief I'm not Martha Stewart or Rachael Ray. Flogger out!

VBS

Our church has been experimenting over the past couple of years with different types of Vacation Bible School. We've played with a week's worth of VBS in the evenings, played with VBS over the course of a few week days and a weekend and this year we did just a few hours on a Friday for the toddlers and simultaneously covered the elementary school kids. The following Saturday was devoted to the Jr/Sr High kids and it was done similar to a day at church camp. From what we've heard so far, all 3 groups went well and the kids had a great time and learned quite a bit!

I (Jenni) led the toddler group... here's a sampling of our day.


We started out by coloring animal
posters as the kids were arriving.

We kicked things off with some singing. Here's
their version of This Little Light of Mine.


After singing, the kids told me about the
story of Noah's Ark while I turned the
pages in the book and helped them out.


After our story time, I had them help me
tell the story again, this time we made a
picture of it as we told the story. Each kid
got to put several things on the picture.


While we were learning about Noah, Emily's
"Cowboy Daddy" aka Tom (who was really
dressed as a jungle safari guy), was teaching the
elementary school kids about Moses and the
Israelites... and glow sticks... and puppets...
and pillars of light... and snacks... and bookmarks.


Here are some of the girls adding their animals
to the ark... with the help of Abby's mom, Katie.


After story time came crafts. I believe in drilling
a story into the kidlets heads. Hehehe... Guess what?!?! The girls
are making a craft with rainbows, clouds, arks,
and animals, along with a Bible verse that reads:
"The Lord is faithful to all his promises and loving
toward all he has made. Psalm 145:13"


Hey, we're sticking to a theme here... For snack
time, we had nilla wafers (arks) with
icing (rain clouds) and rainbow sprinkles!
The kids got to make their own snacks.


They decided it was quite yummy and
highly recommended the icing...
and LOTS of it!

While we don't normally allow this at home,
when Emily asked if she could lick the icing off
her knife I told her, "Go ahead, that knife isn't
sharp... just don't do it when Nanny's around."
Let's see if she keeps her side of the pact and
if Nanny's still reading our blog.


After the kids wrapped up their snacks, I told
them they could make another craft or keep
coloring. I went over and turned the music
back on from earlier in the evening and what
ensued was a mob of 2 and 3 years olds
(okay, 5 of them) having an impromptu
dance party!


At the end of the evening, when all was said
and done, Emily said she enjoyed the night.
And then she proceeded to show her Daddy
how she's going to earn millions.

The Fair and Other Fun Things!

The county fair is always held at the beginning of July and Emily was excited to go this year. She spent at 2 days at the fair this year. One day we watched her 3-year old cousin, Abby, participate in a sheep lead class. The following night we walked around the fair and listened to our friends Keith and Jessica perform in one of the entertainment tents.

One of the highlights for Emily were the junior fair animals. She got a kick out of finding some eggs in with the chickens, got to pet a couple of sheep and though a bit intimidated at first, she did muster up enough courage to pet a calf.

Here's Emily after our cousin, Brenda, took her for a walk with a young calf. (I think it's name was Mr. T and I'm pretty sure Emily was trying to climb over Brenda's shoulder to get away.)


That is until sweet, lovable, child charmer, Grant came along....


With his help, she was willing to pet the calf on the nose and be near it... well, until it started mooing and moving around and then she started squirming again and got to heavy and squirrely for Grant to keep holding her....

She had so much fun at the fair and I was feeling like having a little fun so she got to eat chocolate ice cream for and early supper and then we ate real stuff when we got home.

Have I mentioned this girl loves chocolate ice cream!?!?

Fast forward a week or so and you'll find us saying our farewells to our sweet friend and helper, Nickie. Nickie has been with us since shortly after Emily came home. She works with Help Me Grow and has come out for visits several times a year and helped us with Emily's assessments and placements for therapies and such. She's been a great friend and has reminded me that we are really blessed in so many areas of our lives. Now that Emily is 3, she has outgrown the Help Me Grow program (and a ton of her clothes!) and will be moving up to receive some early intervention services this year. We love you Nickie and truly hope you stay in touch!

Later in July, we took a quick trip to the zoo with Nanny and Papa. It's a tradition that we nearly always stop and visit the petting zoo if it's open... not so much a tradition that we jump on the goats.


Seriously folks!?!? Did you really think I would let my daughter jump on a goat? It's an optical illusion. Breathe in, breathe out and hang up on your phone call to PETA!

A Bit Distracted Lately

I apologize to our fan club... we've been a bit distracted lately.

Two weeks ago Emily started to get a little tickle in her throat. I got an early call from her babysitter saying that she was really warm (cheeks like tomatoes) and was extra tired and had a cough. Whatever she had - she shared with me a few days later. That weekend I tried fixing her supper while she was watching TV... but,s when supper was finally ready and dished out on our plates, this is what I found...



If I'm remembering correctly, she slept here from about 6pm until 8:30pm. I fed her a little supper, let her play for a while until Tom came home from his church meeting and then she went right back to sleep around 9:30 or so and slept until morning.

Last week, Em had her 3rd set of botox injections at children's hospital. I started preparing her for them that morning and told her that she was going to be seeing the doctor and that she was going to get 2 shots. She would also need to hold really still and if she did it would go faster. My mom went with us to help hold Em down so I could talk to her and attempt to comfort her. If you remember this post you'll recall that our last visit to children's didn't go over so well. I made a point to let the nurse know our concerns and asked that Dr. B. please make sure she spend some extra time with Em before she just starts working with her and that it traumatized Em for over a month afterwards. The nurse made the note in Em's record and I figured that would be the end of that. Surprise! Within 2 hours of my chat with the nurse, I received a call from Dr. B. at home. She was very genuine and apologized for any problems our previous visit caused and that she must have been having a bad day, etc., etc. I was very surprised she called and it really felt like she understood what happened and would try to see that it doesn't happen again. Our next appointment for a follow-up is in a couple of weeks... we'll see how it goes!

On the way home from children's I set up an appointment for Em to see her pediatrician because she was still having "issues"... runny nose, cough, ear aches and a new dark circles under her eyes with goop thrown in for good measure. Once again, I prepped her for the appointment and assured her there would be no shots this time... the doctor was simply going to help her eyes, ears, nose, throat, etc. to feel better. Emily was a champ. The only struggle we had was the death grip she put on her carseat while I was trying to get her out of the car. I carried her inside to the elevator and from there something changed and she was an angel. When I signed her in, I let them know that she had a bit of "White Coat Syndrome" and they picked up the clue and let all the folks know that would be dealing with her. She ACTUALLY ALLOWED THEM to weigh her, take her temperature, listen to her heart, look in her ears, nose, eyes and throat. She was the picture of the perfect patient. I have no idea what changed, but I keep bragging about it in front of her hoping for a little positive reinforcement. (A mom can hope, right?) The final diagnosis... Emily was dealing with allergies and had a mild "smoldering ear infection" that would easily be cleared up with a little Zyrtec and Amoxycillin. So far, they've worked wonders!

Last week, Tom spent quite a few days/evenings at the house on the church property getting it ready for our new worship leader and his family to move in. I was able to chip in partway through the week to do some trimming and painting. I helped out over the weekend and again some more this week.

We were greeted by this lovely face on Saturday morning when we went to start painting the living room... I believe this is Keith's artwork. (The white parts of the eyes are actually open port holes from the living room to one of the bedrooms... with the bottoms of water bottles painted for the pupils!)


Amidst the doctor appointments, sickies, painting and work, Tom and I decided to tackle putting together Em's new playset on Wednesday. Armed with the instruction book, some chalk and a plethora of power tools, we set to task.



We started around 9:30 A.M., took a lunch break at the G&R and then kept working and I think we wrapped up around 9:30 P.M. We had a good time working on the project and are marriage is still intact. Bonus points for that, eh?

Tonight we finally had some quality time to spend on the playset and Miss Em seems to be a big fan already.







Oh yeah, and on top of all that other stuff we've been adding a new porch onto the front of our house. Well, "we" haven't but we've hired someone to do it for us. Playset construction is about as advanced as we get! This week, Emily's been thrilled with "new roof!" and "mine steps!"
